Ingredients

5lb Boneless Pork Butt
2 cans whole or diced tomatoes
1 tin Allens Apple Juice
’Big Smokin’ Mama’ dry rub
Kansas City Style Chipotle BBQ Sauce

Prep

-Trim pork fat cap to 1/4”
-Rub liberally all over with Big Smokin Mama dry rub
-Marinate overnight

Method

-Place pork shoulder in roasting pan
-Pour in tomatoes (crush the whole ones with your hands) and enough Apple Juice to just cover pork
-Cover with lid or tin foil and roast at 325 for approx 5-6 hours. Flip halfway and check to ensure liquid hasn’t evaporated
-Pork is done when it pulls apart easily
-Let cool if needed
-Pull pork to desired style
-Pour on BMKC Canada’s Chipotle BBQ sauce and toss well
-Serve with fresh buns, coleslaw and more Chipotle BBQ Sauce
